Mozzarella di Bufala

On a Sunday, a day of rest and leisure, it is certainly appropriate to ponder a moment one of the most glorious types of cheese found in our world: Mozzarella di Bufala.

For those who have had "mozzarella," they should know that it simply pales in comparison with the genuine article: Mozzarella di Bufala -- Mozzarella made from Water Buffalo (Bubalus bubalis) milk.  This is a specialty of the region of Campania in Italy.

If you purchase this type of cheese, it should come fresh and floating in whey.  The Buffalo milk mozzarella is notably flavorful, moist, and soft.  This blogger has eaten it in Rome, Italy, much like a bowl of ice cream!
